Healthy Recipes -Fajitas
This is a fun recipe for getting people involved. Passing the ingredients round the table and attempting to wrap the fajitas yourself make this a truly enjoyable meal.
For the fajitas:
Oil
Chopped onion
400g meat -diced chicken or beef (meat optional)
Chopped peppers (red, green and yellow)
Handful of mushrooms (roughly chopped)
Fajita mix or cajun spice
8 soft flour tortillas
For the table:
Shredded iceberg lettuce
Diced tomatoes and cucumber
Natural yoghurt and/or grated cheese
Method:
- Heat the oil in a large pan.
- Add the onion and diced meat (if applicable) and stir until the meat is thoroughly cooked.
- Add the remaining vegetable to the heat and stir.
- Add the fajita mix or cajun spice.
- Separate fajitas, place on a plate, cover with clingfilm and heat on full power for 1 minute.
- Serve with salad.




Make your own fajita spice by adding pureed garlic, ground black pepper, tomato puree, half a teaspoon of powdered paprika and half a teaspoon of chilli powder. Chilli flakes also make a great addition for spice lovers.
Raita -or yohgurt with mint and cucumber -can help to tone down the spice for those who prefer a milder taste.
A tin of mixed beans and a small tin of sweetcorn can be added as a substitution for vegetarians, or to bulk out the meal. The great thing about fajitas is that they are so versatile.
