Healthy Recipes -Homemade Soup

This is a great way to get your five-a-day and it’s also good if you just need a snack before training.
Ingredients
1 Brown Onion, chopped
3-4 Carrots, diced
3-4 Parsnips, diced
3-4 Potatoes, diced
Oil
Hot water or stock
Seasoning
Method
Heat the oil in a large pan. Lightly fry the vegetables for five or ten minute, stirring so as to prevent sticking. Add the boiling water or stock and simmer for 15-20 minutes or until cooked through. Mash or puree then add seasoning. Serve.
Variations
I use dijon mustard to add some kick and then any leftover cream to make a truly luxurious veg soup. Salt and pepper are a must. A tin of tomatoes can be used to bulk out the recipe and change the taste. Other root vegetables work just as well as carrots and parsnips. Oxo can be used to create a quick stock.
