Healthy Recipes -Salad Nicoise
Tuna steaks are not only a great source of protein and omega 3, but they also provide lean meat -perfect for any training schedule. The accompanying salad will help those trying to eat their 5-a-day and boost an immune system tired by physical activity. Red peppers are a great source of vitamin C, green beans contain iron needed for building muscle and eggs are another great source of protein and omega 3.
Ingredients
- 6 new potatoes
- 2 boiled eggs (boiled 6 minutes)
- 1 red pepper roasted
- 150 g green beans
- 50 g rocket leaves
- 6 black olives
- 200 g cherry tomatoes
- ¼ sliced cucumber
- Juice of 1 lemon
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Balsamic Vinegar
- 2 Tuna steaks
Method
- Boil the potatoes in lightly salted water until tender. Slice and place to one side.
- Boil the eggs until semi-hard, peel and cut into quarters.
- Roast the red pepper under the grill, when skin has blackened place in a food bag, allow to cool and peel off the blackened skin.
- Blanch the runner beans for 2 to 3 minutes and refresh under cold water.
- On a serving platter arrange the rocket leaves, cooked potatoes, roasted pepper, cucumber, olives, green beans, and eggs.
- Make the dressing with lemon juice, olive oil and balsamic vinegar.
- Season and pan-fry the Tuna steaks for 3-4 minutes both sides.
- Place the tuna on the platter and drizzle the dressing over the top.
- Serve with some fresh crusty bread.
