Healthy Recipes – Toasted Smoked Salmon Bagels
Bagels are a favourite amongst runners, they are tasty, easy to digest and provide much needed quick calories before and after training. They’re also great because the go well with fruit, veg and proteins such as meat and cheese -everything you need to stay race fit!
Ingredients
- 1 Food Doctor Bagel
- 2½ Tesco low fat crème fraiche
- 1 tsp fresh lemon juice
- pinch of fresh dill
- 6 cucumber slithers
- 60 g Smoked salmon
Method
- Cut the bagel in half and lightly toast it on the unglazed side.
- Mix together the crème fraiche, lemon juice, dill and season and lightly spread over the toasted bagel.
- Using a vegetable peeler make slithers of cucumber, layer over the crème fraiche and top with smoked salmon and and season with black pepper.
