Healthy Recipes - Vegetable and Chicken Skewers
A simple healthy barbeque recipe of chicken and vegetables. Chicken provides low-fat protein and the vegetables can go towards making up your 5-a-day portions of fruit and vegetables - full of vitamins and nutrition essential for healthy living.
Serve with a green leaf salad and a dressing of your choice or add a new marinade for some variety.
Ingredients
- 1 red pepper
- 1 yellow pepper
- 1 small courgette
- 1 red onion
- 5 cherry tomatoes
- 2 chicken breasts, cooked
- 1 bag mixed salad leaves
- 4 tbsp low-fat salad dressing
Method
- Cut the vegetables and the cooked chicken roughly into 2.5cm (1in) pieces and thread onto skewers.
- Place the skewers onto a hot barbecue and leave until the vegetables start to brown at the edges, turning halfway through.
- When cooked, place the kebabs onto a plate of salad leaves and drizzle with the salad dressing.
Variations
I often coat the skewers in olive oil, then shake cajun seasoning over everything for a great taste. Aubergines and mushrooms can also be strung onto the skewers. Pork, fish and diced beef can replace the chicken. Packeted marinades can give this recipe a tasty twist. Just pop the skewers in a dish and pour the marinade over. Leave in the fridge for a few hours or overnight before barbeque-ing them.
